Thai rice stick noodles are a versatile ingredient in many Thai and other South East Asian dishes. The noodles are similar in size to tagliatelle, but unlike pasta they are gluten-free as well as being vegan and vegetarian.
These rice stick noodles are great for soaking up robust flavours - try adding them to broths a couple of minutes before serving. They're also great stir-fried in dishes such as Pad Thai - just soak them in hot water for 6-8 minutes, drain and toss into the wok.
Rice sticks, better known as pad Thai or Rice Stick noodles are the Oriental equivalent of pasta, which instead of wheat flour, has been made from a paste of rice flour and water. This paste has been spread thinly, cut into flat strips and dried. Because rice stick noodles are made from pure rice flour and water, they are gluten free and come with all the nutritional benefits of rice cereal, which is high in iron, calcium and Vitamins B1 and B2. They are also very low in fat and salt. The lack of gluten in rice stick noodles means that they tend to be more fragile than wheat pasta, so care should be taken when handling and cooking them.
Simply leave in boiling water for 7 to 10 minutes until they are soft, but not falling apart, where after they are ready to toss into your sauce! If you are preparing a soup and wish to add rice noodles, then leave them in boiling water for a slightly shorter time so that they don’t become too saturated when added to the soup.
