-3 large sweet potatoes, peeled and diced

-1 onion, diced

-2 cloves garlic, minced

-2 cups spinach, chopped

-4 eggs

-1/4 cup milk

-1/2 teaspoon salt

-1/4 teaspoon pepper


1. Preheat oven to 350°F. Grease an 8-inch baking dish.

2. In a large skillet, heat a tablespoon of oil over medium heat. Add the diced sweet potatoes, onion, and garlic. Cook for 8-10 minutes, stirring occasionally, until the potatoes are tender.

3. Add the spinach and cook for an additional 2 minutes until it's wilted.

4. In a medium bowl, whisk together the eggs, milk, salt, and pepper.
