We have some amazing news… it’s only one more season to go until our favourite season will be here - SUMMER! The scent of summer is in the air and the thought of warm beaches, late nights and most importantly fresh foods are keeping us going through this rainy British weather!

This week we have been completely inspired by Indonesian cuisine and the beauty of Bali! Let’s find out more…

What foods are Indonesians obsessed with?

One of the main reasons to fall in love with Indonesian cuisine is for the freshness and seasonality of each ingredient. Not to mention, the abundance of spices and herbs to make Indonesian food one of the most flavoursome that we have ever tried and tasted! Here are some of their most popular dishes:

• Sate Ayam or Satay

Satays are a staple of Asian cuisine, but the Indonesian take on this classic dish is unbeatable! Imagine succulent meat marinated in sweet kacep manis sauce and grilled on smoking hot charcoals to create this taste sensation… wow!

• Ikan Bakar (grilled fish)

Another piece of grilled food heaven - this butterfly grilled fish is firstly marinated in sambal chilli flavouring then cooked to perfection on a fired-up charcoal oven.

• Pepes (herbal packet)

Take a banana leaf and simply fill with a mix of in-season meat or fish, in addition to delicious veggies such as mushrooms, grilled veg and add flavour with garlic and chillies.

• Pempek

A delicacy of Indonesia. This dish consists of a combination of fish and tapioca. It is often served with ‘cuko’, a sweet and sour sauce, and a bed of yellow noodles.

Indonesian breakfast recipes

Bali breakfast have become an Instagram trend recently, as bloggers and vloggers alike flock to the country not only to enjoy the beautiful landscapes but to also fill up on amazing breakfast options! But what makes these breakfasts so delicious? Why not try out two of our favourite recipes and find out what the fuss is all about?

Let’s start with the traditional option - Nasi Goreng.

Ingredients:

• 300g long-grain rice

• 2 ½ tbsp oil

• 4 large beaten eggs

• 100g chopped green beans

• 2 diced chicken breasts

• 180g prawns

• 1 clove chopped garlic

• 2 chopped chillis

• 1 tbsp tomato puree

• 1 tbsp kacep manis sauce

• 1 tbsp soy sauce

• 5 chopped spring onions


Method:

1. Bring the rice to boil in a pan of water, stir and then leave to simmer for 10 mins until fluffy

2. Heat the oil in a frying pan and pour in the eggs, using a spatula create an omelette. Flip and cook for a couple of minutes

3. Boil the green beans into a pan of salted water for 5 minutes, drain and set aside

4. Add the rest of the oil to a large frying pan until very hot, add the chicken and prawns then fry for a minute until golden. Next, add the vegetables and seasonings and fry for a further 2 minutes until tender. Finally, add the soy sauce and omelette and mix together

5. Serve onto warm plates with a side salad of tomatoes and cucumbers or a simple prawn cracker will do the trick!


Looking for something sweet? Try Bali’s black sticky glutinous rice in coconut milk.

Ingredients:

• ½ cup black glutinous rice

• 1 cup coconut milk

• 1 ½ cup water

• 2 tbsp palm sugar

• 1 banana


Method:

1. Prepare your rice by washing and soaking for 6 hours prior

2. In a large saucepan, cook the rice with the coconut milk and leave to boil on a high heat, once bubbling turn the temperature down to a low level

3. Keep cooking until the rice absorbs all of the milk and becomes thick, then add 2 tbsp of the palm sugar

4. Carefully slice a banana and sprinkle on the remaining palm sugar in a pan and heat for 10 minutes

5. Spoon the rice into a bowl, top with the banana and drizzle on the remaining coconut milk
