But what is this mysteriously fluffy and pastel green cake made from? I hear you ask. Let’s take a trip back in time to the creation of your new favourite sweet treat.

Where does the Pandan Cake come from?

The main ingredient of this cake are the leaves of the Pandanus amaryllifolius plant. This plant has ancient origins in Indonesia but can be commonly found all around South East Asia, however, it is said that the creation of the pandan cake originated when Dutch colonies introduced European baking techniques to the people of Indonesia and the combination of pandan leaves led to the birth of this heavenly cake.

How to make Pandan Chiffon Cake?

The technique behind the Pandan Chiffon is similar to a French soufflé by mixing together a liquid consistency with a meringue base to create a sponge-like texture. Here’s how;

Ingredients:

• 100g cake flour

• 1tsp baking powder

• 90g sugar

• A sprinkle of salt

• 40g coconut milk

• 1tsp pandan essence 

• 4 eggs (separated into yolk and whites)


Method:

1. Preheat the oven to 180C

2. Start by mixing together the flour, baking powder, 40g of sugar

3. Next add the coconut milk, pandan essence and egg yolks until you have a smooth consistency

4. In a separate bowl, whisk together the egg whites and the remaining 50g of sugar until you achieve soft peaks perfect for meringue

5. Fold the meringue into the flavour mixture and continue to rotate the bowl to ensure a smooth consistency with air bubbles

6. Pour the mixture into a bundt tin and bake for around 30-40 minutes
