One-Pot Chinese Chicken Noodle Soup - An Easy Weeknight Meal

Ingredients:

-   450 grams of boneless, skinless chicken breasts, cut into 1-inch chunks

-   8 cups low-sodium organic chicken stock

-   2 tablespoons soy sauce

-   1 teaspoon sesame oil

-   1 tablespoon grated fresh ginger

-   2 cloves garlic, minced

-   250g of rice noodles or egg noodles

-   2 carrots, peeled and sliced

-   1 cup sliced mushrooms

-   2 cups chopped bok choy or napa cabbage

-   4 green onions, sliced thin

-   Salt and pepper to taste

-   Sesame seeds for garnish (optional)

Instructions:

-    In a large pot/stock pot, mix the chicken, soup, soy sauce, sesame oil, ginger and garlic.

-    Bring it to a boil over high heat.

-    When it boils rapidly, lower to medium-low heat. Let simmer for 5-7 minutes.

-    Stir in the noodles and carrots. Cook for 3 minutes.

-    Add mushrooms, bok choy and green onions. Cook for 2-3 more minutes until noodles are tender but still have some bite.

-    Remove from heat. Add salt and pepper to taste.

-    Dish into bowls and top with extra green onions and sesame seeds if you desire.

-    Eat right away while hot!
