Indian Chicken Marinade

As the sun begins to shine and the days get lighter, the temptation to dust off the barbecue begins to creep in. Lockdown can be the perfect time to experiment with new and exciting recipes, as well as cooking techniques allowing you to discover your inner cooking ability. 

A simple yet effective technique to start with is learning how to create the ultimate Indian summer marinade to spice up your ordinary barbecue dishes.

What is a marinade?

The concept of marinating food comes from the idea of adding as much flavour as possible into the main ingredients of a dish, particularly meat or vegetables. A marinade must be made in a liquid form so that it can seep through into the meat to create more taste. Another essential step of creating the perfect marinade is by combining key Indian spices, blended with a balance of acidic ingredients such as lemon juice, yoghurt or vinegar. This step allows the ingredients to become soft and tender before adding additional flavour!

The importance of marinades in Indian recipes

Many marinades hold importance within Indian cuisine as it is infamous for strong spices and flavours, the most famous marinating recipe being tandoori chicken. This marinated chicken recipe dates all the way back to the year of 1947 and is now one of the most commercially made and loved Indian dishes of today’s age. 

A typical tandoori dish is heated in a tandoor, the heat is generated by burning hot charcoal to give its unique flavour, making it the perfect dish for barbecuing! 

Sing Kee’s Indian Chicken Marinade 

We have combined are spectacular new range of spices together to create a delicious and authentic tandoori meal to share with all the family:

Ingredients

8 chicken thighs

2 tbsp of lemon juice

125g of full fat yoghurt

4 garlic cloves

1 small piece of ginger

½ tsp of Rajah chilli powder

1 tsp of Rajah cumin powder

1 tsp Rajah tandoori masala

1 tbsp vegetable oil

Method

Step 1: Make three cuts into the meat with a sharp knife, add to a large bowl and mix with lemon juice and a sprinkle of salt. Leave for at least 1 hour.

Step 2: Mix the remaining ingredients together in a mixer until a smooth liquid is formed. Pour the new mixture over the chicken so all pieces are completely covered. Leave the ingredients to marinate well overnight.

Step 3: Start to heat the barbecue to a medium heat. Place the marinated chicken on the barbecue and grill until cooked through, approximately 20-25 minutes. When the chicken appears charred it is ready to serve and enjoy!
