What are soba noodles?
Not only are soba noodles rich in taste, but they are also rich in history. Dating back to the early 1600s, in the Edo period a soba restaurant could be found on the corner of every neighbourhood in Japan as the wealthier population enjoyed this meal as a casual lunch.
Traditionally, soba noodles are made from buckwheat and are formed to create a thin noodle - perfect for slurping and enjoying every moment!
What are common soba dishes?
The beauty of many soba noodle recipes is that they can be enjoyed both cold and warm. For this reason, it’s the perfect dish to fill up the family in all seasons!
Chilled soba is usually prepared on a bamboo tray with a garnish of dried nori seaweed and accompanied by a delicious sauce made from the combination of dashi, soy sauce and rice wine. Grab your chopsticks, soak the noodles and enjoy!
If you are in need of a stomach-warming, comfort-food recipe the soba noodle soup is perfect! The simplest and most authentic version of this style is the Kake soba. Kake meaning ‘pour’ explains the overall concept of this delicacy as a bubbling broth is created for the soba noodles to soak up.
To make this dish, start by putting dashi soup stock, dried bonito flakes, kombu and baby dried sardines into a pot and season with soy and mirin sauce. Add in the water and leave to boil on a medium heat. Once the mixture starts bubbling lower the heat and leave to simmer for 2 minutes. Using a sieve, drain the broth into a bowl and you have your soup! Pour over the noodles and add toppings of your choice. Our recommended toppings are; spring onions, wakame seaweed or spinach for a healthy alternative.
Yaki soba noodles are also a great way to enjoy these buckwheat noodles hot. Cooked in a stir-fry style and usually served with diced pork or chicken, as well as a rainbow of vegetables such as bean sprouts, pickled ginger, shiitake mushrooms and peppers.
