Here is to make a delicious Stir-fried Shanghai Noodles with Chicken and Vegetables recipe.
Ingredients:
- 250g Shanghai noodles
- 300g chicken breast, sliced thinly
- 1 tablespoon vegetable oil
- 1 tablespoon ginger, minced
- 2 cloves garlic, minced
- 1 red pepper, sliced thinly
- 1 yellow pepper, sliced thinly
- 1 carrot, julienned
- 1/2 cup bean sprouts
- 2 tablespoons dark soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon Shaoxing wine
- 1/2 teaspoon sugar
- Salt and pepper to taste
- Chopped spring onions for garnish
Instructions:
- Cook Shanghai noodles according to the package instructions. Drain and set aside.
- In a wok or large frying pan, heat the vegetable oil over high heat. Add the chicken and stir-fry for 3-4 minutes until lightly browned.
- Add the ginger and garlic and stir-fry for 30 seconds until fragrant.
- Add the red and yellow peppers, carrot, and bean sprouts. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
- Add the cooked noodles to the pan and toss with the vegetables.
- In a small bowl, mix together the dark soy sauce, oyster sauce, Shaoxing wine, sugar, salt, and pepper. Pour over the noodles and toss until everything is well coated.
- Serve hot, garnished with chopped spring onions.
