Sharing Crispy Duck Pancakes
Crispy duck pancakes are a Chinese must have and much loved favourite for British customers. This summer brings a touch of oriental cooking to your kitchen, with our sharing crispy duck pancakes, perfect for all guests at any age!
What you will need:
1.2kg duck
Chinese five-spice
Fresh ginger
10-12 de-stoned plums
5 tablespoons sugar
2 tablespoons soy sauce
½ teaspoon chilli powder
Grated orange zest
½ cucumber
1 bunch of spring onions
2 packs of pre-made pancakes
How to make:
Step 1 - Begin by preheating your oven 170ºC/325ºF/gas 3. Then rub your duck all over with a generous amount of salt, making sure to cover the inside and outside of the whole duck. Dust the whole duck with Chinese five-spice and grate fresh ginger into the cavity of the duck to flavour.
Step 2 - Place the duck in a roasting tray and into the oven, checking it often and spooning the excess fat away that has rendered from the duck, this method will make the duck extra crispy and tender and will be ready generally after a few hours.
Step 3 - During the cooking process, begin to make your plum sauce. Add 10-12 de-stoned plums to a pan with 5 tablespoons of sugar, a few pinches of five-spice, a couple of tablespoons of soy sauce, half a teaspoon of chilli and a splash of water. Bring to the boil and simmer until you achieve a shimmery pulp. Occasionally taste the sauce to check the seasoning, and put it to one side to cool before serving.
Step 4 - Finely slice spring onions and half a cucumber, buy a few packs of pre-made pancakes and steam in a bamboo steamer.
Step 5 - Once the duck has cooled use two forks to pull the meat apart. Add all the meat plus the crispy skin to the pancakes, plus spring onion, a little cucumber and a dollop of your homemade plum sauce. This meal is great for a ‘help yourself’ buffet style sharing dish and is sure to please all your guests with its authentic oriental flavours.
Chow Mein Sharing Salad
What you will need:
3 cups of cold, sliced cooked chicken
Shredded iceberg lettuce
1 carrot cut into sticks
100g Paldo Pan Stir-Fried Noodles
Sliced spring onions
For the dressing -
1 tbsp soy sauce
2 tbsp oyster sauce
2 tsp brown sugar
¼ cup of vinegar
1 tsp sesame oil
1 crushed garlic clove
1 tsp grated ginger
How to make
Step 1 - Begin by making the salad dressing, combine soy sauce, oyster sauce, sugar, vinegar, sesame oil, garlic and ginger in a screw-top jar and shake well.
Step 2 - Place the chicken in a large bowl, drizzle half the dressing over the chicken and toss to combine, continue to leave to stand for 5 minutes before serving.
Step 3 - Cook noodles as described on their packet. Add shredded lettuce, carrot sticks, spring onion and noodles once cooled to a large bowl and toss along with the dressing. Serve with the prepared chicken and sprinkle remaining sliced spring onion on top to garnish, for a delicious refreshing oriental salad.
