Ingredients

  • Butternut Squash: 1 medium butternut squash, halved lengthways and peeled
  • Peanut Oil: 1 tablespoon
  • Ginger: 2.5 cm piece, peeled and grated

  • Hot Water: 250 ml (9 fl oz)

  • Fresh Coriander to garnish (a small handful)

Cooking Instructions :

Prepare the Squash: Halve the butternut squash lengthwise and scoop out and discard the seeds. Cut into bite-sized pieces (about 1 inch).

Heat Oil and Aromatics: In a wok on medium high heat, add the peanut oil. When hot, the grated ginger, star anise and cinnamon sticks. Cook for a few seconds, until fragrant.

Add Butternut Squash: Add the butternut squash pieces to the wok and stir-fry for 1 minute or so, until coated in the oil and aromatics.

Season: Add both light and dark soy sauces, stirring to combine. Then pour hot water into the wok.

Braise the Squash: Cover the wok and continue cooking, stirring occasionally, until the squash is tender, about 10 minutes. If it gets too dry, add more water to keep it from sticking.

Final Seasoning: When tender, stir in the Chinese five-spice powder and brown sugar. Toss to combine all of the flavors well.

Serve: Serve it out, sprinkle over fresh coriander, and serve hot.
