Chinese New Year: A sumptuous Sweet and Sour Pork

Ingredients:

1 pound boneless pork loin, cut into bite-sized pieces

1 cup bell peppers (red and green), cut into chunks

1 cup pineapple chunks

1/2 cup onion, cut into chunks

1/2 cup carrot, thinly sliced

2 cloves garlic, minced

1 cup cornstarch

Vegetable oil for frying

Salt and pepper to taste

Sauce:

1/2 cup ketchup

1/4 cup rice vinegar

1/4 cup sugar

1/4 cup pineapple juice

2 tablespoons soy sauce

1 teaspoon grated ginger

1 teaspoon cornstarch mixed with 1 tablespoon water

Instructions:

1.       In a mixing bowl, coat the pork pieces with cornstarch, salt, and pepper. Shake off excess cornstarch.

2.       Heat vegetable oil in a deep pan over medium-high heat. Fry the pork pieces until they are golden brown and crispy. Remove and drain on paper towels.

3.       In a separate pan, sauté the garlic until fragrant. Add the bell peppers, onion, and carrot. Stir-fry for a few minutes until they start to soften.

4.       Add the pineapple chunks and the fried pork to the pan with vegetables.

5.       In a small bowl, mix the ketchup, rice vinegar, sugar, pineapple juice, soy sauce, and grated ginger. Pour the sauce over the pork and vegetables.

6.       Stir in the cornstarch-water mixture to thicken the sauce. Cook until the sauce becomes glossy and coats the pork and vegetables evenly.

7.       Serve hot with steamed rice.
