How to Cook Buddha’s Delight

1. Prepare the Ingredients

Start by soaking the dried shiitake mushrooms in warm water for around twenty minutes until they are soft. Once rehydrated, slice them thinly and then set aside. Wash and prep all vegetables, ensuring they are evenly chopped for quick cooking.

2. Stir-Fry Aromatics

Heat the vegetable oil in a large wok or pan over medium heat. Add the garlic and ginger, stirring until fragrant, about 30 seconds.

3.Cook the Vegetables

Begin by adding the carrots, bamboo shoots, and mushrooms. Stir-fry for 2-3 minutes to soften slightly. Then, add the napa cabbage, baby corn, and snow peas. Continue stirring for another 3-4 minutes.

4. Add the Sauces and Tofu

Mix the soy sauce, hoisin sauce, and sesame oil in a small bowl. Pour this mixture into the wok along with the vegetable stock. Toss the tofu into the pan, ensuring everything is evenly coated with the sauce.

5. Thicken the Sauce

Reduce the heat to low and stir in the cornstarch slurry. Let the dish simmer for 2-3 minutes until the sauce thickens slightly, coating the vegetables and tofu beautifully.

6. Finish and Serve

Add the mung bean sprouts just before serving to maintain their crunch. Season with salt and pepper to taste. Garnish with fresh coriander or sesame seeds if desired. Serve hot with steamed rice or noodles.
