What are Laksa Noodles?
If you are searching for a ‘Singapore noodles recipe’, it is likely that you will find two different recipes for the traditional noodle soup of Singapore.
‘Laksa Lemak’ is the curry laksa variation where curry powders, ginger and shrimp paste are brought together in a seafood broth. The noodles are added and topped with giant prawns.
On the other hand, ‘Asam Laksa’ produces a more spicy and tangy flavour. The most common fish used for this dish is usually chubb mackerel. Whilst the tanginess comes from the use of tamarind paste, bringing the thick noodles together.
